Congee (Rice Porridge):

Congee has been used preventatively to promote good health and digestion for centuries.

It provides the environment for the proper function of the spleen-stomach and its transformative abilities.

By jump-starting the digestive system congee injects the nutrients right where they are needed and naturally heals by nurturing the digestive system to maximize its function.

My recipe:

  • Rinse 1 cup of organic jasmine rice very well

  • Add 7 cups liquid, measure out 1 box of organic bone broth (approx 2.5 cups), and make up the difference with water (approx 4.5 cups).

  • Add one vegetable bouillon cube

  • Add 7-10 chunks of ginger

  • Bring to a boil, reduce heat to low, stirring occasionally, and simmer with the lid off until the liquid is nearly gone (2 hrs +/-) I prefer to leave it a little soup-like.

  • Turn off the heat and let cool to room temp, pull out ginger chunks, and put congee into glass containers for refrigeration

  • Reheat as needed in a pan with a spoonful of melted coconut oil

The cooking, cooling, and reheating process, greatly reduces the carb load from the rice and makes the congee medicinal for the gut.
